Zucchini Bread

Zucchini Bread
Ingredients
3 eggs
1 c. chopped pecans
2 c. sugar
3 c. flour
1 c. oil
2 tsp. baking soda
2 tsp. vanilla
1/4 tsp. baking powder
2 c. grated, peeled zucchini
1 1/2 tsp. cinnamon
1 8 oz. crushed pineapple, drained
3/4 tsp. nutmeg
1 tsp. salt

Directions

Mix eggs, oil, sugar, vanilla together. Beat until thick. Add dry ingredients. Add pineapple, spics, nuts. Grease and flour pans. Bake @ 350 degrees — 1 hr. until toothpick comes out clean. (Makes 2 loaves.)
